I am a self confessed sweet tooth and Saturday breakfast is an excuse to eat dessert for breakfast. The key to good waffles is whipping the egg whites, then folding them through the batter, to make them light and fluffy and still a little crunchy on the outside.

These waffles are summer style - Nectarine, blueberry and passionfruit butter, all drizzled with pure maple syrup. 

Better yet, these waffles are plant based, vegan and dairy free too!

 Whisk coconut cream then stir through passionfruit pulp, chill in fridge overnight or until thick.  Whisk 2 cups coconut milk, 1 tsp salt, 3 egg yolks, 2 1/4 cup self raising flour, 3 Tbsp caster sugar, then add 100g melted coconut oil.  If you can leave batter to rest for 30-60mins.  Beat 3 egg whites till stiff, then fold through batter when ready to cook.  Spray cooking spray on hot waffle iron and pour in batter until almost covering the bottom.  Close until light golden brown.  Keep warm in oven at 50degreesC until all are cooked.  To serve, pile up waffles with freshly cut nectarines, blueberries, a spoon of passionfruit butter and a drizzle of maple syrup.  Mmm!!!
These waffles freeze well once cooked and then pop them in the toaster to warm up.
