RECIPE: SMOKED KAHAWAI & FRESH HERB SCRAMBLE
I am an egg convert. For years I barely ate eggs and then had a revelation a year ago that all the green juices I was having were really acidic and harsh on my stomach in the morning. Now I eat eggs every morning (weekends excluded for waffles and yum cha) and am so much happier for it.
I scramble or poach with no oil or milk and add flavour with flaked salt and pepper and either smoked salmon and avo, smoked fish (my fav is Kahawai) and fresh herbs, sautéed field mushrooms and leeks, fresh tomato and bacon and then I top it all off with a drizzle of truffle oil and sprinkle of superfood seeds - sunflower, linseed, sesame, hemp, pumpkin. This gives the dish a deep nutty flavour and makes it feel like a cafe meal even at 7.30am on a Tuesday morning.
This takes less than 5 minutes to prepare every morning and 5 to eat - I eat slow and read the news. Its the best way to start the day.
Eating well doesn't have to be boring or the same every day.
